Black bean coconut curry


People always ask me to share the recipes I create and I try by best to do that. But as you probably know already, my recipes are not so accurate because I always go with the flow and sometimes I just can't remember what I used in my food :D.

Here is the recipe for the black bean coconut curry:

You need:

  • Black beans (either dried or organic tinned ones without any additives)

  • 1/4 of a small fresh coconut (to make the milk, if you don't know how, then here you can find out)

  • new baby potatoes

  • 1 medium onion

  • 2 handfuls of okra

  • Spices (curry powder-coriander,cumin,cinnamon,cardamom,cloves,fennel; cinnamon stick, fresh ginger and some chilly if you are a kapha type)

  • tiny bit of ghee or coconut oil to sweat the cinnamon stick, onion and ginger

  • salt

You first need to cut the onion rings and sprinkle some salt on it, put it aside in a covered container. If you leave the onion out in the open, it will take all the bad bacteria in, so it's not edible anymore. Onion was used to get the illness causing bacteria out of the house when i was a child!

Then let the oil to get hot on a pan, add the cinnamon stick, after a minute or so add onion and when the onion is sweating already, then add ginger.

Don't let the ginger to burn!

All the soaked (if dried beans) or washed (if tinned) beans to the pan and little bit of water.

While the beans are cooking on a low heat, peel the potatoes and cut them in half or whatever size you prefer. Add them to the beans and add also 1 tsp of curry powder. Let them cook until the beans and potato are almost ready.

While this is cooking, cut the okra into small pieces.

When the potatoes and beans are almost ready add salt, coconut milk and okra and let it simmer until the okra is ready. It's all done!

You can have this curry with rice or i had it with sweet potato.
