Red lentil curry

This dish is one of my favorite ones! It can be made for all three doshas (constitutes) Vata, Pitta and Kapha by adding or removing certain ingredients.
Red lentils are easiest to cook from all the lentils as they cook very quickly. If you are in a rush or maybe a bit too tired after a long day, make sure you have red lentils in the house always to make a nice comforting dish which is full of taste and nutrients.
This particular recipe if great for Vata and Pitta dohas. If you are a Kapha type of person, leave out coconut milk.
This is enough for 2-3 people, depending how good is the appetite
What you need:
1 cup of red lentils
about 2 cups of water (can be a bit more to make the lentils more saucier)
1 tsp of curry powder (without chilly)
some fresh ginger to taste
salt to taste
1 onion (red or white)
2-3 tbsp of coconut milk
ghee or coconut oil to fry
1/4 tsp tamarind extract (optional)
Wash the lentils until the water is clear which means that you need to change the water few times before the lentils actually get clean. This is a small but important tip that was given to me by my dearest Guru Dr. Deepika Rodrigo. Lentils actually taste different after you wash them!
Put 1 tsp of ghee or coconut oil on a pan and wait until warm. Cut onion into small pieces and fry until looking shiny. Cut fresh ginger into smaller pieces and add to the onion to fry few more minutes together.
Now you can add the washed red lentils and cover with water. You may want to cook it on a lower heat, so the water doesn't evaporate too quickly. Add the curry powder and salt (and tamarind if you decided to go for that as well). Leave it to cook until the lentils look soft and mushy. You can add more water if needed as it supposed to be a sauce and stir well. When the lentils are almost ready, add the coconut milk and leave to cook for another 5-10 min. Voila! All ready!
This dish is great with some soft basmati rice. If you are a Vata or Pitta type of person, add 1 tsp of ghee in the rice.
If you are kapha, no ghee is needed.
Very simple, quick and delicious meal!
